Gourmet at home

So this was supposed to have been posted like, 2 weeks ago. But anyhow, still relevant since I’m making this salmon as we speak—

Last night I made a BANGING dinner. I’ve cooked salmon before but it never quite comes out as good as I would like. This time I cooked it in a pan on the stove instead of baking it in the oven, and marinated it for a few hours before hand. Crispy skin, perfectly cooked, well seasoned. I had with a side of whole wheat pasta with homemade dandelion pesto. Pretty simple, but recipes below:

Salmon marinade (i didn’t really measure anything btw):

  • olive oil
  • soy sauce
  • honey
  • curry powder
  • turmeric
  • about 2 inches of chopped ginger
  • –put all the ingredients in a plastic bag with the salmon and let it sit for awhile–
  • –cook skin down until it browns (if you like a crispy skin) and then flip it over and cook it until the flesh flakes; add the remainder of the marinade in the pan for more flavor

Dandelion pesto

  • dandelion greens
  • garlic
  • oil
  • salt/pepper to taste
  • pine nuts (optional: they’re usually to pricey for me)
  • –i roughly chopped everything and put it in a little food processor and added oil until it blended; but you could also very finely chop everything and add oil and skip the food processor, your choice
