INSANITY–2 weeks down

I’ve completed two weeks of INSANITY, and I honestly think I’m starting to see some results. I don’t have a scale so I don’t know how much or if I’ve actually lost pounds, but I feel like my clothes are starting to fit better, so that’s a plus. My problem is, that I think is a pretty common problem, is that I build muscle mass pretty quickly. So while I may be getting right and tight, I also get kinda bulky, especially my legs. I haven’t quite figured out the right formula of diet and exercise that allows me to get lean without getting big–maybe there isn’t one. Who knows? But every two weeks on the workout you have to do a fit test. The goal, of course, being to get better each time. There are 8 exercises and you do them each for a minute with a brief rest in between. I definitely improved on most exercises, only one stayed the same. Again, it’s very apparent that my weaknesses are really quad/glutes because anything …

Chips, chips, and more chips

I haven’t posted much through my unprocessed month even though I have cooked a lot. But today’s lunch is all chips–plaintain chips, kale chips, and sweet potato chips (or really fries, but hey, in some countries they’re called chips). Good color variety on my plate, wouldn’t you say? Got a good dose of vitamin A, vitamin K, iron, vitamin C, vitamin b6, magnesium and potassium

Pumpkin Flan

I got this recipe from Martha Stewart a year ago when looking for things to make with pumpkin. She had a whole list of just pumpkin desserts. Last year it was SO good that I decided to make it again this year. My first attempt (in a new apartment with a new oven) didn’t work out so well. My oven cooks pretty quickly, even at a lower temperature. So I tried a second time and only baked for about 40-45 minutes. It may not look all that beautiful, but it’s delicious! Ingredients 1/2 cup granulated sugar 3/4 cup light-brown sugar 1/2 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon ground nutmeg 1/4 teaspoon coarse salt 1 cup cooked pumpkin puree 1 1/2 cups half-and-half or cream 5 large eggs, beaten 1 teaspoon pure vanilla extract 1/2 cup heavy cream, whipped Directions Preheat the oven to 350 degrees. INSANITY-Day 2

Today the real workout began. I woke up dumb early, again (like 5 AM early) and got a snack and turned on the video. The warm up had me done. We did it three times and each time it got faster. And then the workout?….*blinks*…let’s just say Shaun T. didn’t misname this workout video. I’ve watched a number of  different exercise dvds–pilates, yoga, hip hop aerobics, mixed aerobics, and so on and so forth. I don’t actually enjoy them, which is why I never buy them. I borrow them, and then promptly return them once I feel thoroughly stupid doing the routines. But in all of those videos I have never, EVER, seen the people they hire to look good and do the workout in those videos fall out on the floor. Usually they’re super pumped up, sweating through their branded t-shirt, even while the trainer is yelling at them to go faster and push harder.
